½ onion, finely sliced
1 pound of ground lamb
1 pound of ground beef
1 tablespoon of garlic, minced
1 teaspoon of dried oregano
1 teaspoon of ground cumin
1 teaspoon of dried marjoram
1 teaspoon of ground dried rosemary
1 teaspoon of ground dried thyme
1 teaspoon of ground black pepper
¼ teaspoon of sea salt
10 pita bread rounds
½ head of lettuce, shredded
1 onion, sliced in halve, and thinly sliced
2 tomatoes, diced
1 cup of feta cheese crumbles
1 cup of Tzatziki sauce

Directions:
Directions:
In a large bowl, combine the onion, lamb and beef until well mixed. Add garlic, oregano, cumin, marjoram, rosemary, thyme, black pepper, and salt. Mix with hands until well combined. Cover and refrigerate for 2 hours.

Preheat oven to 325º F.

Spray cooking spray into a 4 x7-inch loaf pan and pour meat mixture into pan (making sure there is not air pockets). Line a roasting pan with a damp kitchen towel. Place the loaf pan on the towel, inside the roasting pan, and place into the preheated oven. Fill the roasting pan with boiling water to reach halfway up the sides of the loaf pan.

Bake until the gyro meat is no longer pink in the center, and the internal temperature registers 165º F. on a meat thermometer (about 45 minutes to 1 hour). Pour off any accumulated fat and allow to cool slightly before slicing thinly and serving.

Serve with pita bread, lettuce, onions, tomatoes, feta cheese crumbles, and tzatziki sauce.
