2 c. sugar
c. oil
4 eggs
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 c. grated carrots
8 oz. can crushed pineapple
c. chopped nuts

Directions:
Directions:
Cream sugar and oil. Add eggs and beat well. Add rest of dry ingredients. Fold in carrots, pineapple and nuts. Pour into 9 x 13" pan that's been greased/floured or sprayed with baking spray. Bake 350 40 minutes. Cool before frosting.

I stick butter, room temperature
8 oz cream cheese, room temperatur
1 tsp. vanilla
1 lb. powdered sugar

Directions:

Beat softened butter and softened cream cheese at high speed until smooth. Add vanilla and fold in powdered sugar.
