1/2 c butter, softened
1/2 c shortening
1 1/4 c sugar
2 large eggs
1 tsp vanilla
1/2 tsp almond extract
2 1/4 c flour
4 tsp dried lavender flowers
1 tsp baking powder
1/2 tsp salt

Preheat oven to 375º. Lightly spray cookie sheets with Pam.

Cream together butter, shortening, and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts; mix well.

In a separate bowl, whisk flour, lavender flowers, baking powder, and salt; gradually beat into the creamed mixtures.

Drop by rounded teaspoonfuls onto prepared sheets; about 2 inches apart.

Bake until golden brown, 8-10 minutes. Cool 2 minutes on the pan before removing to wire racks. Store in an air tight container.

Note:
Because shortening melts at a higher temperature than butter, it's useful for baking cookies that you want a nice uniform size and shape.

Look for dried lavender flowers in spice shops or if you have your own make sure they aren't treated with any chemicals.

We grow a lot of lavender on the Olympic Peninsula and have a Lavender Festival every July. The fragrance of the lavender and buzzing of the bees is amazing. This recipe came from one of the venders and you can get anything lavender there. Fun times!
