1 c sugar
1 c light brown sugar, packed
1 c shortening
1 c peanut butter
3 large eggs, lightly beaten
1 c flour
1 c quick-cooking oatmeal
2 tsp baking soda
1 tsp baking powder
1 c pecans, chopped
1 c sweetened flaked coconut
1 c raisins
1 c semi-sweet chocolate chips

Directions:

Preheat oven to 350º. Lightly grease cookie sheets.

Combine sugar, brown sugar, shortening and peanut butter; cream together till smooth. Use electric mixer on medium speed; add, eggs and beat well.

Combine flour, oats, baking soda, baking powder. Add the peanut butter mixture; mix well. Stir in pecans, coconut, raisins, and chips. and any remaining ingredients.

Drop by teaspoonfuls onto the prepared sheets, about 2-3 inches apart.

Bake for 10-12 minutes or until golden. Remove from cookie sheets immediately and cool on wire racks.
