Homemade Moose Munch Recipe

2-3 oz bags popped popcorn
1 c cashews
1 c whole almonds or use unsalted mixed nuts
1/2 c unsalted butter
1 c light brown sugar, packed
1/3 c dark Karo syrup
1/2 tsp kosher salt
1 tsp vanilla
1/2 tsp baking soda
2 oz white chocolate, melted
2 oz dark chocolate, melted

Pop the popcorn. Lightly grease baking sheets.

Place popcorn in a large mixing bowl, along with the nuts.

Melt butter in a medium saucepan over low heat. Stir in the brown sugar, Karo syrup, and salt.

Increase heat to medium and bring to a boil, stirring constantly.

When Carmel comes to a boil, reduce heat to medium-low and allow to simmer. Stirring constantly, until temperature reaches 235º on a candy thermometer.

Remove from heat, stir in vanilla and baking soda, the mixture will get really foamy.

Slowly drizzle Carmel over the popcorn, while stirring to coat. Sometimes it is easier to have a helper, one to stir and one to pour.

When popcorn is well coated with Carmel, spread out on prepared sheets; evenly. Bake for 1 hour.

Allow to cool completely, then drizzle with melted chocolates. Let chocolates set, then break apart the moose munch into chunks and package in mason jars, boxes etc. for gifting.
