2 Shallots
1 Clove Garlic
˝ Cup Beef Stock
2 Tablespoon Pink Peppercorns
1 tablespoon Redcurrant Jelly
1 Cup Double cream
Splash of White Wine
Sea salt and Cracked Black Pepper

Directions:
Directions:
Sauté the shallots and garlic until soft.
Add a splash of wine to de-glaze the pan
Add the peppercorns and beef stock then reduce by half
Add the redcurrant jelly and double cream, reduce by half
Boil until thickened and check seasoning
