500g Chicken Liver
170g Butter
170g Butter (room Temperature)
Sage
3 Shallots
3 Garlic cloves
50 ml brandy
Pinch nutmeg
Sea salt
Cracked black pepper

Directions:
Directions:
Clarify the first batch of butter by placing in the oven at 110c
Soften shallots and garlic in a pan for 10 minutes and set aside
Pan fry the livers, (2 minutes each side) with some chopped sage
De-glaze the pan with the brandy and add to livers
Place the livers, butter, brandy, shallots and garlic into a blender and blitz well
Season with nutmeg, salt and pepper
Line a 1Ib loaf tin with cling film and place mixture into the tin, allow to set enough to pour the clarified butter onto
Place sage into butter and refrigerate until set
