3 eggs
1 c. oil or applesauce
2 c. sugar
2 c. peeled and grated zucchini
1 tsp. vanilla
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 c. chopped nuts (optional)

Directions:
Directions:
Beat eggs until foamy. Add oil/applesauce, beat until smooth. Add sugar, beat. Add zucchini and vanilla. Mix in flour, baking powder, baking soda, and cinnamon. Mix until creamy. Add nuts. Stir until smooth.

Bake at 350 in greased loaf pans.
