6 boneless/skinless chicken breasts
Thinly sliced ham
Sliced Swiss cheese

Panko bread crumbs


Sauce:
½ C honey
⅔ C Dijon mustard
¼ C mayo
½ tsp onion powder
⅓ C sour cream

Directions:
Directions:
Heat oven to 400º
Mix honey, mustard, mayo and seasoning, set ½-⅔ cup aside for brushing onto raw chicken. Add ½ cup sour cream to remainder for dipping sauce after chicken has been baked.
Pound chicken breasts to ¼" thickness
Spread with reserved mustard sauce
Layer ham and cheese on top of sauce
Roll tightly and secure with toothpick if necessary
Brush outside with reserved mustard sauce
Coat with bread crumbs and place on baking sheet
Bake 30 min or until 160º internal temperature
Serve with additional mustard sauce

Optional:
1. Mix grated Parmesan cheese with bread crumbs
2. Generously coat breaded rolls with cooking spray before baking to aid in browning
3. Set oven to broil for last 5 minutes to crisp bread crumbs
4. Add broccoli, cauliflower, carrots and/or diced potatoes around chicken on baking sheet. Drizzle veggies with a touch of olive, salt; bake everything together until tender and cooked through.
5. To Freeze: assemble and roll chicken, sauce, ham, cheese then tightly wrap in plastic wrap and freeze. Thaw completely, remove plastic wrap, coat with mustard sauce and bread crumbs; bake.
