1 cup uncooked River rice (rinsed) (½) 5 cups milk (2½) 1 cup sugar (½) 4-5 eggs (2 eggs & 1 yolk) Cinnamon for ½ recipe use amount in parenthesis

Directions:1. Rinse rice thoroughly than place in non stick large stock pot. Add a little water. 2. In another pan warm milk (not hot). 3. Add milk to rice and stir. Let it come to a boil and reduce heat to medium low. 4. Cook about 45 minutes, stirring every 8-10 minutes. 5. When rice is almost cooked, stir in sugar. Cook until rice is tender. 6. Remove from heat and slowly and carefully stir in 4-5 beaten eggs. 7. Heat 2 more minutes. 8. Place in serving platter and sprinkle with cinnamon. |

Grape Nut Custard |

Ingredients: 2 eggs, slightly beaten ¼ - ½ cup sugar ⅛ tsp. salt 1 tsp. vanilla 2 cups milk, scalded 2 tbsp. grape nuts 1 tbsp. butter ¼ tsp. nutmeg (optional)

Directions:1. Preheat oven to 325º. Butter a small baking dish. 2. Beat eggs. Add sugar, salt and vanilla. Continue to beat. 3. Scald milk. Stir milk into egg mixture. Pour into baking dish. 4. Melt butter with grape nuts and sprinkle on top. Sprinkle with nutmeg if desired. 5. Bake for 25 minutes. |
