Carrot Cake Recipe

2 cups flour, may need to add ⅓ cup more
2 cups sugar
1 cup cooking oil
2 tsp. soda
2 tsp. salt
2 tsp. cinnamon
3 cups grated carrots
4 eggs
1 cup chopped nuts
Cream Cheese Icing:
1-8oz. package cream cheese
1 cube butter
1 lb. or 3 cup powdered sugar
1 tsp. vanilla

Mix dry ingredients. Add cooking oil and grated carrots. Mix well. Add eggs one at a time. Mix well. Add nuts. Bake at 350 for 40 minutes.

Make icing to spread on cooled cake.
Soften butter and cream cheese to room temperature. Mix together with mixer. Add powdered sugar and vanilla. Beat with mixer until creamy and spreadable.
