8 oz. bucatini, spaghetti, tagliatelle or other thick, long pasta
2 tbsp. extra virgin olive oil
1 tsp. freshly ground black pepper, plus more to taste
(preferably coarsely ground)
salt to taste
2 oz. Pecorino Romano, finely grated
additional cheese for garnish

1. Bring a large pot of salted water to a boil, add the pasta and cook until al dente.
2. Prepare the sauce: Warm olive oil in a large skillet over medium-low heat.
3. Add the pepper and cook until it just starts to sizzle (about one minute).
4. Take skillet off the heat. Return over medium heat 1 minute before pasta is done.
5. Drain the pasta well. Reserve 1 cup of the starchy pasta water.
6. Add pasta to the skillet and cook for 1 minute, tossing to coat in the oil.
7. Reduce heat, add ½ cup of the pasta liquid, then gradually mix in 2oz. cheese.
8. Using tongs, stir and toss until the cheese melts and sauce forms.
9. Drizzle more pasta liquid in as you are stirring to thin out sauce if needed.
10. The pasta should be evenly coated in the sauce, but water shouldn't pool.
11. Season to taste with salt. To serve top with Pecorino Romano and black pepper.
 

Salsa Maria Rosa (Vegetable Sauce)


Ingredients:

2 tbsp. butter
¼ cup olive oil
1 large onion, diced
2 large cloves of garlic, chopped
2 medium carrots, diced
2 stalks of celery, diced
2 tbsp. parsley, chopped
1 (12 oz.) can crushed tomatoes or
can of whole tomatoes, crushed
water as needed
salt and pepper to taste

1. In a large saucepan over medium heat, melt the butter in the olive oil.
2. Add the onion, garlic, carrots and celery.
3. Cook, stirring often, until softened, 8-10 minutes. Stir in parsley.
4. Add tomatoes. Bring the sauce to a boil. Season with salt and pepper.
5. Reduce the heat. Partially cover the pan and cook for about 45 minutes.
6. Prepare pasta as indicated on package.
7. Serve vegetable sauce over pasta.

Cacio e Pepe (Cheese and Pepper) is another recipe Grandpa learned from Nonna.
It was featured on the 2021 CNN Stanley Tucci series, "Searching for Italy" during the Rome episode. The Salsa Maria Rosa, featured on the Florence episode, is a simple but delicious vegetable sauce. It was named after a neighbor who gave it the Tucci family.
