2 Tbsp oil
2 shallots or gr onions sliced
2 cloves garlic minced
1 Tbsp ginger minced
3 Tbsp Thai red curry paste (or less)
1 can coconut milk
1 Tbsop brown sugar
1 Tbsp fish sauce
1 small sweet potato cubed (4 cups)
340 g shrimp (30-40 count)
3 cups sugar peas
2 Tbsp lime juice
I added baby bok choy and less sugar peas
Directions:
Sauté shallots, garlic, ginger. Stir in curry paste, cook for a minute. Add coconut milk, br sugar, fish sauce and 2 cups water. Add sweet potato, bring to boil then simmer until almost tender....6 minutes. Add shrimp and peas and simmer about 4 minutes Stir in lime juice.
Garnish with green onion, chopped peanuts and lime wedges.

Can serve as soup or over rice or noodles.
Number of Servings: 2 (I double it) . 450 cal
