3 lbs boneless pork shoulder or pork butt
3 tsp sage
2 1/2 tsp salt
2 tsp black pepper
2 tsp marjoram
1 1/2 tsp crushed red chili peppers , or to taste
1/2 tsp savory
1/2 tsp cayenne chili pepper
1/4 tsp nutmeg
1 tsp allspice

Directions:
Because pork shoulder is usually very fatty, you shouldn't need any additional fat added to the mix. If the meat is to lean, add about 1 cup of ground pork fat.

Chill the meat before grinding. Grind the meat, using a fine grinder plate. Place meat in large bin or pans. Mix all spices together; sprinkle over top of meat and work in with your hands.

When the sausage is throughly mix, chill for about 1 hour. If you want a finer sausage, put back through the grinder. Re-chill; put through the sausage maker/stuffer and into the casings. If it is to cold it will be hard to stuff, but if to soft, it will be sticky to work with.

Cooking:
To get real German taste to your sausage, add onion and caraway seeds to the boiling water or boil in beer. Serve with spicy mustard and brown bread
