3 lbs, 75% lean pork shoulder
2 lb lean beef
2 T kosher style salt
1 T fine ground black pepper
1 T marjoram
2 T granulated onion
2 tsp ground celery seed
1 1/2 tsp ground nutmeg
1/2 tsp cardamon
1/2 tsp mace
1/2 tsp ground goinger
1 c ice water

Directions:
Directions:
Trim pork and beef, cut meat into 1 inch cubes, and grind it through the fine 3/16 inch plate of your meat grinder.

Combine spices and water in a small container.

Pour spice water mixture into the ground meat and mix thoroughly, for at least 2 minutes. Use your hands for mixing to assure even distribution.

Put mixed sausage into a covered bowl and refrigerate for up to 8 hours.

Bring the chilled and rested mixture, once more through your fine grinding plate.

Stuff sausage immediately into 1 1/4 inch natural hog casings or collagen castings. Allow sausages to air dry for up to 1 hour. Or, you can make patties and separate with hamburger papers and freeze.

Use immediately or freeze up to 3 months.

To cook bratwurst, simmer in beer for 10 minutes. Then brown on the grill and serve it on buns with sauerkraut and spicy mustard.
