3/4 c long-grain white rice
1/4 tsp salt
1 1/2 c water
1 qt eggnog (store-bought)
1/4 tsp nutmeg
1/2 c dried cranberries

Options:
1 tsp cinnamon
1/4 tsp pumpkin pie spice
1/4 tsp nutmeg

Directions:
Directions:
In a large heavy saucepan, combine rice, salt and water; bring to a simmer over medium-high heat. Cover and reduce heat to low; simmer until water has been absorbed; about 15 minutes.

Add eggnog and spices; cook over medium heat, stirring continuously for about 30 minutes, until mixture thickens. Do not overcook.

Remove from heat. Stir in cranberries, if using. Serve warm, or cover and refrigerate to serve cold.
