2 c soy sauce
1 c white vinegar
1 c water
2 T Worcestershire sauce
1 T hot sauce
1/4 c non-iodized salt
1 c brown sugar
1/4 c white sugar
1 tsp powdered ginger
splash maple syrup
1-2 T dried onions
Fillets of any fish, Salmon and Steelhead are best

Directions:
Directions:
Combine all ingredients and mix together well in a large container with a cover. Place fish fillets in the brine and coat well. Let fillets soak overnight in this mix; turn occasionally.

Remove the fillets from the brine and let air dry, about 20-30 minutes. Smoke in the smoker on low at about 160º - 170, until done to desired dryness.
