15 lbs tomatoes, chopped and peeled ( I like Roma tomatoes)
3 large onions, diced
4 cloves garlic, minced
1 each green, red, & orange bell pepper, seeded and chopped
1c celery, diced fine
6-6oz cans tomato puree
1 T cracked pepper
3 T salt, I use less
5-6 bay leaves
1/4 c Italian seasoning or more to taste
1/4 - 1/2 c spaghetti mix seasoning
1-2 c red wine, and little for the cook
1/8 - 1/4 tsp crushed red pepper
1/4 - 1/2 tsp fennel, I use more

olives, roasted garlic, Italian sausage or hamburger.

Directions:
In a canner combine all ingredients; bring to a boil. Reduce heat to a simmer, stirring frequently so it does not burn; uncovered for 2-3 hours. Cook until it reaches the consistency and thickness you like.

Sterilize jars and place in hot water with lids. Pour the pasta sauce into the jars leaving a 1/2 inch headspace; lid and band jars. Place jars into a hot water bath canner; cover with water to at least 1 inch above jars. Bring to a rolling, constant boil and process; pints- 20 minutes and quarts- 25 minutes.

Remove jars to a towel and cover completely, let rest undisturbed for 24 hours. Check that the lids are sealed and store in a cool dry place.

Note:
If you use meat in your sauce it must be processed in a pressure canner or frozen.
