1 c vinegar
1 c water
1/2 cinnamon stick, more or less to taste per jar
cooked beets
pickle crisp

Cook beets until tender; peel and slice, quarter or whole. Salt beets while cooking.

Pack sterilized jars with cinnamon stick and 1/4 teaspoon of pickle crisp, into each jar, per taste; I use 1/4 stick. Add beets to a 1 inch headspace. Clean the rim of jars with a clean cloth and place in hot water with lids.

Brine: Combine sugar, vinegar, and water together; stir well. Cook until sugar is dissolved and brine has boiled; about 3-5 minutes. Pour brine into packed, hot jars to 1 inch headspace. Lid and band; process in a hot water bath for 30 minutes.

My Mom made the best pickled beets. I prefer less intense cinnamon flavor, always delicious.
