8 cucumbers, sliced
1 large Walla Walla sweet onion, sliced
3 1/2 - 4 c Seasoned Rice vinegar
4 c water
2 T salt
2 T dill weed
1/2 tsp per quart of pickle crisp
fresh cracked pepper
pinch red pepper flakes, to taste
1 tsp celery seed
2 T sugar canning salt to taste

Directions:
Directions:
Place cucumbers in a bowl and toss with 2 tablespoons of salt; set aside for 15-30 minutes. Lightly rinse cucumbers; drain.

In a large bowl; add drained cucumbers, and remaining ingredients; mix well. Refrigerate for 2-4 hours before serving. Mix well before serving.

Options:
You can add any fresh vegetables from the garden with this recipe; carrots, peppers, cherry tomatoes etc.

Store in an upright container so it doesn't take up so much refrigerator space. I use a half gallon jar. They last a long time and you can add additional vegetables as depleted.
