2 cups crushed strawberries (about 1 qt fully ripe, stems removed)
4 cups sugar
3/4 cup water
1 box sure-jell fruit pectin
Containers to put jam into (half pint mason jars recommended)

Rinse and dry the containers that you will be filling

In a food processor, add strawberries and pulse several times, do not mash.

Measure exactly 2 cups of strawberries into a large bowl. It’s very important to measure berries and sugar exactly or jam will not set properly.

Add sugar, one cup at a time, stirring very well each time. Let stand for 10 minutes.

While waiting, add water and pectin to a saucepan. Bring to boil over high heat, stirring constantly. Once at a boil point, stir for one minute, remove from heat and add to strawberry mixture.

Stir well until sugar is dissolved.

Fill containers with jam and leave ½” of head space at the top. Cover with lids and allow to stand at room temperature for 24 hours.

After 24 hours, you can refrigerate or freeze.
