1 egg, beaten
1 c. buttermilk
1/2 c. water
1 tsp. salt
4 1/2 to 5 cups sifted flour
1 whole chicken, cooked, deboned and cut up
3 quarts chicken stock
salt and pepper to taste
pinch of sugar (optional)

Directions:
In a large bowl, to the beaten egg, add the buttermilk, water and salt. Work flour in gradually using hands (if necessary) mixing to form a dough, a little stiffer than for biscuits, and slightly sticky. When thoroughly mixed, turn out the dough on a floured board and divide into workable balls. Roll balls into strips, as thin as possible, then cut into squares. Set aside.

Heat broth (3 quarts of rich simmering chicken stock) and drop dumplings into the pot, one by one. Add salt and pepper to taste, and pinch of sugar (optional). Simmer gently for about 30 minutes or until dumplings are tender and slightly puffed. Then add cut up chicken and keep warm until stock thickens - about 15 minutes longer.
