4 cup diagonally sliced carrots
11/2 cup apple juice
½ teaspoon salt
1/3 cup honey
3 Tablespoon oil
1 lemon, washed and juiced
½ cup sliced prunes (optional)

Directions:
Directions:
Combine carrots, juice, prunes and salt in saucepan. Bring to a boil, boil for 10 minutes. Add honey, oil, lemon juice, and washed lemon halves. Simmer over medium flame for 30 minutes, or until most of liquid is absorbed and carrots are glazed. Garnish with additional grated lemon peel if desired.
