5 eggs, separated, at room temperature
1 cup sugar
3 small ripe bananas, mashed (approximately 1 cup)
1/3 cup oil
2 tsp. lemon rind, grated
1 tsp. orange rind, grated
¼ tsp. salt
¾ cup cake meal
¼ cup potato starch
½ tsp. nutmeg

Sauce:
¾ cup firmly packed dark brown sugar
6 TBS.water
2 tsp. lemon rind, finely grated
¼ tsp. salt
2 small ripe bananas thinly sliced
4 tsp. fresh lemon juice

Directions:
Directions:
In large mixer bowl, beat yolks with ½ of the sugar until thoroughly blended. Blend in bananas, oils and rinds
Using clean beaters, beat whites with salt, until soft peaks form
Gradually add remaining sugar, beat until stiff but not dry
Fold in yolk mixture
Sift together cake meal, potato startch and nutmeg
Gently fold into egg mixture in 2 additions.
Turn into greased 10” bundt pan, smoothing surface
Bake in preheated 325 oven for approximately 1 hour until tester comes out clean.
Invert onto rack, cool
Prepare sauce, in heavy saucepan, bring sugar, water, rind and salt to boil
Reduce heat to low
Add bananas; simmer gently for 5 minutes
Remove from heat, stir in lemon juice
Press sauce through sieve.
Serve warm or cold over cake.
