5 med. yellow squash, washed and diced
1/4 tsp. salt
1/8 tsp. pepper
1 T. bacon grease
1 tsp. instant minced onion
about 1 c. water
1 c. chopped ham
1/2 stick oleo
1 (4 oz. pkg) Nabisco Premium saltine crackers, crushed
10 oz. Longhorn cheese, grated

Directions:
Preheat oven to 350ºF. Combine first 6 ingredients and cook on low heat, covered, stirring frequently until the squash is limp. While this mixture is cooking, sauté the ham in the oleo on low heat. Combine the first group of ingredients with the ham and oleo. Add crackers (crush with your hands as you drop them in). Stir well until the crackers are moist, adding a little more tap water if it is too dry. Put mixture in a buttered casserole dish and top with grated cheese. Bake in a preheated 350º oven for 15 minutes, or just until the cheese is melted. Serves 6.
