1 c. mashed potatoes
1 c. potato water, drained from potatoes
1 yeast cake
1/2 c. lukewarm water
1 tsp. salt
1/2 c. sugar
1/3 c. melted shortening
2 eggs (optional)
8 c. flour

Directions:
Directions:
Mix lukewarm water and yeast. Add potato water and potatoes, salt, sugar, shortening and eggs. Beat until well mixed. Add flour slowly, beating continually (8 cups). Turn on board and knead until very elastic. Let rise to double its size, knead down and let rise again. Knead and form into loaves. Let rise to double again, then bake at 400ºF for 45 to 60 minutes.
