8-10 eggs, beaten together and add:
½ pint half and half or 2 cups milk
1 cup shredded cheddar cheese Save a little of the cheeses to sprinkle on top before cooking
1 cup shredded mozzarella cheese or pepper jack cheese
Salt and pepper to taste

Mix together any, none, or all combinations of the following and add to egg mixture.

Diced onions, celery, red and/or green peppers
Chopped ham, bacon, or cooked sausage
Mushrooms, sliced black olives, diced chiles

Set oven at 350 degrees for 50-60 mins toothpick comes out clean in center of pie

Spray quiche dish, pan or pie plate lightly with Pam

Using one or two ready made pie crusts, line the dish and pinch the top.
Poke a few fork holes in the crust.
Line the bottom of the crusted pan with baby spinach.

Mix ingredients together and pour into baking dish, filling close to the rim.

Bake for 50-60 mins until toothpick comes out clean in center of pie, until mixture is set Let stand for 10 min before cutting into quiche
