2 chicken breasts, cooked and sliced into bite size pieces
1 cup carrots julienned
cup cilantro, fresh chopped
1 garlic clove, minced
1 tbsp ginger, minced
⅓ cup peanuts, roasted

Dipping Sauce:
peanut butter
1 tbsp soy sauce

Coleslaw Mixture:
3 cups coleslaw mixture
tsp black pepper
tsp red pepper flakes
tsp salt
cup olive oil
3 tbsp rice vinegar, unseasoned
1 tsp sesame oil

6 tortillas

1. In a large bowl combine all coleslaw mixture ingredients and set aside to rest.

2. In a small bowl whisk together all dipping sauce ingredients and allow to rest.

3. Add all filling ingredients to the coleslaw mixture and stir well.

4. Stuff tortillas with the mixture and cut in half prior to serving with the dipping sauce.
