6 cups tin sliced onion
1 T sugar
˝tsp pepper
⅓cup veg oil
6 cups beef broth
1/2 cup shredded parmesan
sherry?


On medium low heat, cook onions, sugar and pepper in oil for 20 min or until onions are carmelized. Stirring frequently!
Add broth and bring to a boil. Reduce heat. Cover and simmer for 30 minutes. Ladle soup into ovenproof bowls . Top ea. with a slice of bread. sprinkle with cheese
