2 cups brown sugar (packed)
2 cups granulated sugar
8 eggs (beaten)
2 1/2 cups oil
4 tsp ground cinnamon
4 tsp baking soda
2 tsp salt
4 cups plain flour
6 cups finely grated carrots
3 tsp vanilla

Icing:
2 (8 oz) cream cheese
1 cup butter
4 tbsp milk
2 tsp vanilla
2 lb confectioners sugar

Directions:
Directions:
Preheat oven to 350 degrees. Grease a 10x15 inch pan.
Blend sugar, eggs, oil and carrots. Sift dry ingredients and mix well together. Pour into the greased pan. Bake for 45 to 50 minutes, or until done.

Icing:
Cream together cream cheese, butter, vanilla and milk. Slowly add the confectioners sugar. Once mixed well, spread onto cake after the cake is cooled.
