1 c. Cake Flour
¾ c. Granulated Sugar
1½ c. Egg Whites, room temperature
1½ tsp. Cream of Tartar
¼ tsp. Salt
1½ tsp. pure Vanilla
¾ c. Granulated Sugar

Directions:
Preheat oven to 350º.
Sift flour with ¾ c. sugar twice. Set aside.
Beat egg whites with cream of tartar, salt and vanilla until soft peak forms. Add remaining ¾ c. sugar (2 tbsp.) at a time. Continue beating until stiff peaks form.
Sift about ¼ of flour mixture over egg whites and fold in (by hand) repeating folding in flour mixture by fourths. Bake in ungreased angel food cake pan for 35-40 minutes. Turn pan upside down to cool.

**I usually use 1½ of this recipe per batch. You will need to bake about 10 minutes longer.
