2 lbs yellow squash
medium onion
1 can cream of chicken soup (can substitute w/ cream of celery)
1 egg
1 c sour cream
1 c grated cheddar cheese
8 oz pkg herb stuffing mix
1/2 c butter or margarine
Salt and Pepper to taste

Directions:
Directions:
Cook squash and onion for 10-15 min. Pour into large mixing bowl and add soup, sour cream, egg, and cheese. Add a little salt and pepper to taste.
In a separate bowl, melt butter and add stuffing mix.
Spread 1/2 the stuffing mix in the bottom of a greased casserole dish. Spoon squash mixture over and then top with remaining stuffing mix.
Bake @ 350º 30 min.
