2 oz. squares Unsweetened Chocolate
3 Eggs
2 c. Sugar
1 c. Vegetable Oil
2 c. Zucchini, shredded
2 tsp. Vanilla
3 c. Flour
2 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. Salt
¾-1 cup Semi-sweet Chocolate Chips

Directions:

Preheat oven to 350º. Grease 2 bread loaf pans.
Melt unsweetened chocolate in microwave at 30 second increments, stirring occasionally until chocolate is smooth. In a medium bowl combine flour, baking soda, baking powder and salt. Set aside. In a large bowl beat eggs, sugar, oil and vanilla. Add in melted chocolate. Stir in the shredded zucchini and chocolate chips. Mix well. Add the flour mixture and stir until well blended. Pour into prepared bread loaf pans. Bake for 60 minutes or until toothpick inserted into center comes out clean. Cool on wire racks for 10 minutes. Remove bread from pan and cool completely.
