2 pounds of ground beef
2 (1.25 ounce) of taco seasoning mix
1 onion, chopped
2 teaspoons of minced garlic
1 (2 ounce) can of black olives, sliced
1 (4 ounce) can diced green chili peppers (optional)
1 (10 ounce) can of diced tomatoes with green chili peppers
1 (16 ounce) jar thick and chunky salsa
2 (16 ounce) cans of refried beans
6 (10 inch) flour tortillas
2 (8 ounce) packages shredded Mexican cheese

Directions:

In a large pot. over medium heat, brown the ground beef for 5 to minutes, or until no pink remains. Drain excess fat. Add taco seasoning, and 1 1/2 cups of water. Simmer and stir until sauce thickens. Add the onion and garlic, and sauté for 5 more minutes. Mix in the olives, green chile peppers (optional), tomatoes with green chili peppers (drained), salsa and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 20 to 25 minutes, or until thickened.

Preheat oven to 350º F.

In a 10-inch spring form pan, spray with cooking spray to coat bottom and sides well. Add a tortilla, then spread a thin layer of the meat mixture on top of tortilla, and a thin layer of cheese, repeat process until 1 inch below rim of pan and topping off with a layer of cheese.

Bake for 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly.
