Buttermilk Dressing

cup Buttermilk
2 Tbsp olive oil
2 Tbsp vegie oil
1 Tbsp lemon zest
1 Tbsp fresh lemon juice
1 tsp rice vinegar
1 tsp sea salt
pinch of pepper
1 shallot, chopped fine

2 heads Broccoli
1 cup raw quinoa
cup parsley
tarragon
chopped pistachios.

2 heads broccoli, cut into florets, boil crisp-tender, 1 minute. Transfer to ice water, cook. and drain.
Cook 1 cup white or black quinoa, about 12 minutes. Cool.
Add dressing and parsley, tarragon and pistachios.
