Directions:
Make a mound of flour and crack the eggs in the middle
Mix the eggs into the flour until a shaggy mass forms
Kneed on a floured work surface for 5-7 mins
Wrap in cling film and let rest in the fridge for 1 hour ( letting the gluten relax)

On well floured surface roll out dough with floured rolling pin

I recommend cutting the mix in half and doing this in 2 batches

Roll out as thin as you can and slice to desired thickness
Cook in boiling salted water for 3 mins and strain
