5 lb Potatoes
1 lg Onion Chopped
1 jar Bread & Butter Pickle Spears, chopped
Miracle Whip
Mustard
Celery Seed (optional)

Directions:
Peel potatoes, cut into chunks and put on stove and boil for about 10 minutes. Check for tenderness and then drain and immediately run cold water over them to stop the cooking process. While the potatoes are cooking and then cooling, chop the onion into small pieces. Slice the pickle spears down the middle and then chop into bite size pieces. In large mixing bowl place the onion; pickles and the cold potatoes and gently stir together just enough to mix it up. Add Miracle Whip by large tablespoons at a time and stir gently to evenly coat the ingredients then add mustard to suit your taste as well as salt and pepper. Add about 1 tsp celery seed and mix thoroughly. When it is all mixed together completely transfer to container with a lid and place in the refrigerator.

I usually put my kettle of water on to get hot while I am cutting up the potatoes, so the water is boiling and they cook faster - DO NOT OVER COOK! I also use russet potatoes. DO NOT OVER MIX or you will end up with mashed potatoes. You can hard boil 2 or 3 eggs and slice them and place on top of your potato salad.
