2 cup Cauliflower, steamed
3 Eggs, hard boiled, finely chopped
¼ cup Red Onion, chopped
⅓ cup Sweet Salad Cubes Pickles (may use dill pickles if preferred)
½ cup Celery, chopped
⅓ cup Light Mayonnaise
⅓ cup Light Miracle Whip
1 tsp Yellow Mustard
Paprika, optional

Directions:
Directions:
Mix the mayonnaise, miracle whip, and mustard together and set aside. After the cauliflower has cooled a few minutes, chop into the size you would if you were using potatoes. Add the chopped eggs to the cauliflower and stir in the chopped onions, celery, and pickles. (May add in some bacon bits, if desired). Add the mayo mixture and mix well. Add salt and pepper to taste and sprinkle with paprika for color.
