1 pkg Cauliflower Rice
1 cup Frozen Hash brown Potatoes, thawed (I use the shredded type)
1 cup Shredded 2% Milk Cheddar Cheese, divided
cup Chopped Onion
cup Plain Greek Yogurt
1 cup Healthy Request Cream of Chicken Soup (mixed per directions on can)

Preheat oven to 350 . Microwave cauliflower rice for 3 minutes. Let sit for 1 minute. Mix together the cauliflower rice, hash brown potatoes, cup of the cheese, onion, Greek yogurt, and the soup.

Spray baking dish with Butter flavored cooking spray. Pour cauliflower mixture into baking dish and spread evenly. Sprinkle the other cup cheddar cheese over the top of the casserole. Bake for 30 minutes.
