1 pkg Cauliflower Rice
1 cup Frozen Hash brown Potatoes, thawed (I use the shredded type)
1 cup Shredded 2% Milk Cheddar Cheese, divided
½ cup Chopped Onion
½ cup Plain Greek Yogurt
1 cup Healthy Request Cream of Chicken Soup (mixed per directions on can)

Directions:
Preheat oven to 350 º. Microwave cauliflower rice for 3 minutes. Let sit for 1 minute. Mix together the cauliflower rice, hash brown potatoes, ½ cup of the cheese, onion, Greek yogurt, and the soup.

Spray baking dish with Butter flavored cooking spray. Pour cauliflower mixture into baking dish and spread evenly. Sprinkle the other ½ cup cheddar cheese over the top of the casserole. Bake for 30 minutes.
