2 cups plain flour
2 cups sugar
2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
4 eggs
1 cup oil
2 small jars apricot baby food.

Icing:
1 (6 oz) cream cheese
1 stick butter
3 cups powdered sugar
2 tsp vanilla

Directions:
Directions:
Preheat oven to 350 degrees. Grease and flour tube pan.
Sift together flour, sugar, baking soda, salt and cinnamon into a large mixing bowl. Add eggs one at a time, mixing well after each egg. Add oil and baby food. Pour into tube pan and bake for 60 minutes or until done. Let cake cool.

Icing: Cream together cream cheese, butter and vanilla. Add powdered sugar. Spread onto cooled cake and sprinkle with chopped nuts if desired.
