2 to 3 pound uncooked corned bear roast
5 carrots, cut into 2 inch pieces
4 medium red potatoes (quartered)
2 medium onions (quartered)
1 small head cabbage (about 1 1/4 pounds), cored and quartered

Directions:
Directions:
Drain and rinse corned meat in cold water as directed. Place in dutch oven. Cover with cold water. Heat to boiling. Reduce heat; cover. Simmer until almost tender, 2 3/4 to
3 3/4 hours. Add carrots; recover. Simmer for 20 minutes longer. Add potatoes, onions, and cabbage; re-cover. Simmer until meat and vegetables are tender, about 30 minutes longer.
