¾ cup white sugar
⅓ cup flour
¼ tsp. salt
2 cups whole milk
3 eggs
2 tbsp. butter
1 tbsp. vanilla extract

A baked 9 inch pie crust

Directions:
Directions:
In a pan, mix sugar, flour and salt on medium heat. Pour in milk and stir with wisk until hot.
Slightly beat egg yolks (save egg whites for meringue). Take a couple of tablespoons of the hot mixture to the egg yolks to temper them. Then add the egg yolks to the sugar mixture. Once it starts to make a plopping sound, add vanilla and butter. Thicken, then pour into already baked (and cooled) pie crust. Chill and serve.

For Butterscotch Pie:
Substitute brown sugar for white sugar

For Chocolate Cream Pie:
Increase white sugar to 1 cup. In sugar and flour mixture stir in 3 tablespoons of cocoa powder.
