Dressing:
⅓ cup apple cider vinegar
¾ cup sugar
2 tbsp. lemon juice
1 tsp. salt
1 cup vegetable oil
½ small grated red onion
1½ tbsp. poppy seeds
1 tsp. dry mustard
½ tsp. paprika

Salad:
2 bags baby spinach leaves
Artichoke hearts (chopped & drained)
pecans
dried cranberries or cried cherries
blue cheese crumbles (optional)

Dressing:
Combine all ingredients into a sauce pan. Place on stove on medium heat. Stir constantly until sugar dissolves. Bring to a boil, then remove from heat. Cool to room temperature. Whisk in vegetable oil, red onion, poppy seeds, dry mustard, and paprika. Chill.

Salad:
In a large salad bowl, place as much or as little of salad ingredients and toss. Pour chilled dressing over salad.
