2 to 3 cups mashed potatoes
1 small onion (diced)
1/3 cup plain flour
2 large eggs (lightly beaten)
1 tsp salt
1/4 tsp black paper
1/4 tsp garlic powder
1 sprig fresh parsley chopped fine
butter or oil for frying

Directions:
Directions:
In a large bowl, whisk the flour, eggs, salt and pepper together. Stir in the potato, onion and spices. In a medium skillet, heat 2 tbsp of oil (or butter) until simmering. Drop circles of the potato mixture into the skillet, flattening them with the back of a spoon if necessary. Cook over moderately high heat until the edges are golden, about 1 1/2 minutes. Flip and cook until golden on the bottom, about 1 minute. Drain excess oil on paper towels. Repeat with the remaining potato mixture, adding more oil in skillet as needed. You can keep finished cakes heated in the oven at 200 degrees while you are making the rest on they're all hot and ready to go at the same time.
