1 tablespoon unsalted butter
1/2 large yellow onion, sliced into strips
1 1/2 tablespoon curry powder
1 can of unsweetened Coconut milk
2 tsp granulated sugar
6 cups of turkey or chicken stock
1/2 cups small carrots, peeled and sliced
2 cups of cooked turkey
1/2 tsp lemongrass powder (not necessary)
1 cup prepared rice
Salt to taste

Directions:
Directions:
1. In a large, heavy pot, melt butter. Add onions strips and saute until they begin to turn translucent.
2. Add curry powder and coconut milk to the pot. Stir to fully combine. Hat on medium heat, stirring frequently, until currey becomes aromatic (approximately 5-10 minutes)
3. Add sugar, stock, carrots, turkey, and lemongrass. Stir to fully combine. Bring to a low boil, lower heat and simmer for 30 minutes or until carrots are soft.
