3 T oil
1 1/2 cup uncooked rice
1/2 cup diced onion
1 clove minced garlic
1 cup diced tomatoes
1/2 tsp salt
2 chicken bouillon cubes (or equivalent)
3 cups boiling water

Directions:
Directions:
Sauté rice in hot oil until golden brown. Add onion, garlic, and tomato. Stir while cooking 2-3 minutes.

Dissolve the salt and bouillon in the boiling water. Add to rice mixture.

Bring mixture to a boil. Cover and reduce heat to simmer, 20-22 minutes or until liquid is all absorbed. DO NOT REMOVE lid while cooking! Listen at the side of the pan to determine when all liquid is absorbed.
