6 eggs
3-4 cups Flour
2-3 T olive oil
1-2 tsp salt

Beat eggs. Add olive oil and salt. Work in flour gradually until desired consistency.

NOTE: Charlene makes a bowl of flour on a board and puts her egg mixture in the center, pulling in flour from the outer edges as she mixes in the flour.

Roll dough on a floured breadboard like you would a pie crust. Roll dough like a jelly roll. Cut dough into ½” strips, and then unroll strips on foil to dry. Left strips dry about 6-8 hours.

Drop dried noodles into slow boiling chicken broth and boil slowly until done.
