4 Chicken breast halves
2 Bay leaves
1 small onion, diced
Salt and Pepper to taste
1-2 celery ribs, minced
3 hard boiled eggs, diced
⅓ cup pickle relish
1 cup mayonnaise

Directions:
Directions:
Cover chicken breasts in with water in large pot with bay leaves and bring to a boil. Cook until done, about 20 minutes. Let chicken cool in the water. Once cooled, remove the chicken and dice it up.

In a large bowl, combine the diced chicken, add salt and pepper, then all of the remaining ingredients. Gently stir to combine.

Cover and refrigerate
