1 jar papaya (or 1 to 2 fresh)
1 pineapple
(NOTE: these two should be equal to one another in
amount; dice both very small)

1/2 purple onion (3 in. diameter), diced
3 to 6 T. finely chopped cilantro

DRESSING:
1 to 2 T. olive oil
2 to 4 T. rice vinegar
1 T. sugar
1 t. salt

Directions:
Directions:
Combine papaya and pineapple. Mix dressing
ingredients together until sugar is dissolved. Pour over
papaya mixture and toss well. Chill. Serve with tortilla
ships or on broiled fish.
